You’ll Need:
1 box whole wheat pasta elbows
1 bag baby spinach or 1 package frozen spinach
1 tbs. butter
3 tbs. flour
1 and 1/2 cups milk
3 cups shredded cheddar cheese
Easy Peasey!
Option 1: Drizzle a little olive oil into a sauté pan. Add your spinach and wait for it to shrink and become soft. Put the wilted spinach into your food processor & puree!
Option 2: Defrost frozen spinach (be sure to squeeze moisture out) and put right in your food processor
Spinach should be smooth
Make pasta according to package
Get a pan and melt your butter. Add flour over medium heat. Whisk while slowly adding milk – it should be bubbling slowly
Get your shredded cheese and stir that in until melty
Add your pureed spinach
Mix the drained pasta to the sauce and stir to coat pasta.
